
This beginner friendly Oven Baked Jerk Chicken recipe delivers the perfect balance of smoky, sweet, spicy, and savory flavors. Made with a homemade jerk marinade featuring fresh herbs, warm spices, lime, and scotch bonnet peppers, this recipe brings authentic Jamaican inspired cuisine straight to your kitchen.

6 pieces of chicken thighs
2 tbsp olive oil
2 tbsp soy sauce
2 tbsp lime juice
2 cloves garlic
1 small onion
1 stalk spring onion (also called green onion)
2 cm ginger
2 scotch bonnet pepper
1 tbsp brown sugar
1 tsp allspice
1 tsp nutmeg powder
1/2 tsp clove powder
1 tsp paprika powder
1 tbsp dried thyme
1/2 tsp black pepper

Combine olive oil, soy sauce, lime juice, garlic, onion, spring onion, ginger, scotch bonnet pepper, brown sugar, allspice, nutmeg, cloves, paprika, thyme, and black pepper, in a blender. Add some water (50 ml) and puree until it becomes a paste.

Marinade the chicken with the paste, cover it with plastic wrap, and refrigerate for at least 2 hours or overnight to allow the flavors to infuse.

Bake your Jerk Chicken in a preheated oven at 180°C for 20 minutes, then flip your chicken and bake it again for 30 minutes.

Serve the grilled chicken with lime wedges.
